Apple and oat muffins

  • 1/2 tsp baking soda

  • 1 pinch salt

  • 1/2 tsp vanilla extract

  • 100g non-fat Greek yoghurt

  • 1 egg

  • 1/4 cup brown sugar

  • 1 medium green apple

  • 90g oats

  • 40ml skim milk

  • 3/4 cups wholemeal flour


Method

1. Preheat the oven to 200C and lay a small 12-cup muffin pan with cupcake cases.

2. Grate the apple.

3. In a large bowl, mix all the dry ingredients.

4. In a separate bowl, lightly whisk the egg and combine it with the oil, milk and yoghurt.

5. Add the wet mixture to the dry ingredients and mix until just combined. Mix through the apple.

6. Divide batter evenly among prepared muffin cups.

7. Bake in the oven for about 20 minutes or until muffins spring back when pressed lightly in the centre.

8. Remove and cool on wire rack.


Tip: The muffins can be stored in an airtight container for up to 10 days or individually wrapped and frozen for up to 3 months.
