Potato Frittata

Ingredients

  • 200g potatoes, quartered

  • 1 cup asparagus tips

  • 1 tbsp olive oil

  • 1 small red onion, finely chopped

  • 6 large eggs

  • 3 tbsp grated cheddar

  • 1½ cup rocket


Method

1. Heat a saucepan of salted water on high heat.

2. Put the potatoes in pan and bring to the boil.

3. Once boiling, cook for 4-5 mins until nearly tender, then add the asparagus in the last 1 min. Drain.

4. Heat oil in a frying pan and add the onion. Cook until softened.

5. Mix the eggs and half of the cheese in a mixing bowl and season well.

6. Pour egg mixture over the onion in the pan, then scatter over the asparagus and potatoes.

7. Top with the remaining cheese and cook for 5 mins or until golden and cooked through. 8. Cut into wedges and serve from the pan with rocket.
