Burrito Bowl

Another adventure in pretending I can cook today:


Burrito bowls!


Tasted AMAZING and, most importantly, incredibly easy to make.


How I (let's face it, Simon did most of the work again) did it!


1. Cut up a brown onion, a capsicum (whatever colour) and a couple cloves of garlic (we used a garlic press for ours buymt just buy the jar stuff, I won't judge) and fry in a little oil. Set aside


2. Put rice in rice cooker. Or however else people who can cook, cook rice. 😂


3. Cook the beef mince (we used 500g and made 4 meals) until brown and then add taco/burrito spice mix - or make your own if ya fancy and follow packet directions. Add salt and pepper to taste.


Optional: add some chilli flakes/cayenne pepper to give it some flavour and get your matabolism going!


4. Add the cooked capsicum and onion that you'd set aside back into the mince and stir.


SALSA


Cut another half a brown onion, a tomato, some capsicum (we used red in mince and green for this), and add in some canned corn. Add a splash of salt and pepper and lime juice and stir.


5. Once everything is cooked, serve and enjoy! I added lettuce to my bowl for a lil something extra but again your bowl your choice!


P.S. the idea is to stir it all up once served, Simon was just being fancy for my photo hahaha
