Beef and basil potato salad

Ingredients

  • 340g potatoes

  • 40g rocket

  • 1/2 red onion

  • 2 tomatoes

  • 4 tsp basil

  • 200g lean beef fillet

  • 1/2 tbsp balsamic vinaigrette

  • 1 tbsp olive oil


Method

1. Cut the potato into quarters, thinly slice the onion and chop tomato in segments.

2. Preheat oven to 200°C. Place potatoes on a baking tray lined with baking paper. Spray with half the olive oil and toss to coat. Bake until golden brown and tender, tossing occasionally. Set aside for 10 minutes.

3. Spray both sides of the beef fillet with the remaining olive oil and season with pepper. Cook the fillet to your liking and set aside for 5 minutes. Thinly slice beef.

4. Add the tomato, onion, rocket, chopped basil, potatoes and cooked meat in a large bowl. Drizzle with vinegar, season with salt and pepper and toss to combine. Serve and enjoy.
