Eggplant Pizza Bites

These Eggplant Pizza Bites are super yummy and only take 30 minutes from prep to done! These can be reheated for a snack during the day.

Ingredients
2 medium tomatoes, diced
1 tsp dried oregano
1 tsp balsamic vinegar
Salt & pepper, to taste
1 medium eggplant, sliced into rounds
½ cup (60g) vegan parmesan cheese, grated (or regular parmesan)
2 sprigs fresh basil (optional), leaves picked and torn
Method
Makes 4 servings
Preheat your oven to 220°C (200°C fan-forced). Line a baking tray with baking paper and set aside.
In a small saucepan, combine the diced tomatoes, oregano, balsamic vinegar, and a pinch each of salt and pepper. Simmer over medium heat for 4–5 minutes, or until the tomatoes have softened and the mixture thickens slightly.
Arrange the eggplant slices on the prepared tray in a single layer. Spoon a little of the tomato mixture over each slice, spreading it to cover the surface.
Sprinkle grated parmesan over the top of each round, pressing lightly so it stays in place.
Bake for 20–25 minutes, or until the eggplant is soft and the cheese is golden and crisp at the edges.
Just before serving, scatter with fresh basil leaves for a burst of flavour and colour.
