Peanut Butter & Chocolate Protein Bars












These protein bars are rich in chocolate flavor and packed with protein.

Ingredients

  • ⅔ cup (200g) crunchy natural peanut butter

  • ⅓ cup (100ml) boiling water

  • ¾ cup (75g) rolled oats (GF option: brown rice flakes or quinoa flakes)

  • 1¼ cups (150g) chocolate protein powder

  • ¾ cup (100g) hemp seeds (or hemp seed powder)

  • ¼ cup (50g) 70% dark chocolate chips


Method

Makes 12

  1. Line a 20cm square tin with baking paper, leaving extra paper hanging over the edges to help lift the bars out later.

  2. In a small bowl or jug, combine the peanut butter and boiling water. Stir until the mixture is smooth and well blended. Set aside.

  3. Blitz the oats in a food processor or blender until they resemble a coarse flour. Tip them into a large mixing bowl.

  4. Add the protein powder and hemp seeds to the oats, then pour in the peanut butter mixture. Mix everything together until a thick, slightly sticky dough forms. If it’s too dry to hold together, add a splash more hot water, one tablespoon at a time.

  5. Press the dough firmly and evenly into the lined pan, smoothing the top with the back of a spoon or your hands.

  6. Sprinkle the chocolate chips over the surface, pressing them gently into the dough.

  7. Chill in the fridge for at least an hour, or until firm. Once set, lift out using the baking paper and slice into 12 bars.
